Laura Valcour of Burr Ridge, the food and beverage director at Midtown Athletic Club in Willowbrook, formerly taught culinary nutrition education via a parent's network at Lyons Township High School.

Q: How long have you been at Midtown Athletic Club?

A: Two years

Q: What did you teach at Lyons Township High School?

A: I taught cooking classes. They were sponsored by the Parent Community Network and were part of an on-going series of presentations (on various topics). I talked about healthy eating, healthy snacks for kids, food for picky eaters and quick and easy dinners.

Q: Why did you want to work at Midtown?

A: I saw an opportunity to help bring healthy menu items to their cafe and to do presentations that incorporate nutrition. For wellness, you can't have fitness without the nutrition side.

Q: What degree are you pursuing?

A: I am pursuing a bachelor of science in nutrition at Benedictine University in Lisle and a CHES, which is a certified health education specialist.

Q: What is your long-term goal?

A: My long-term goal is to create programs for wellness that incorporate nutrition. I'd build a program so you'd have both a personal trainer and someone to guide you with the nutrition.

Q: What are your hobbies?

A: I have so many. I love reading and movies. I like inspirational film like 'Rudy' or 'Mona Lisa Smile.' I also like the 'Intouchables.' I really like the message of overcoming obstacles and friendships.

Q: What is your favorite cuisine?

A: I love Asian. I love Italian because it is part of my background. But when I need comfort food, it's typically Mexican.

Q: Are you married?

A: Yes. My husband's name is Guy. We have three (grown) children.

Q: What is on your bucket list?

A: I want to go to Yellowstone. Ever since I saw that documentary about the national parks, I want to go to Yellowstone. I want to go to Positano (Italy). We went there on our honeymoon and we always said we'd go back. I want to go to Munich and Napa Valley.

Q: What is the hardest part of what you do?

A: The hardest part is long hours, but at the same time it's rewarding. Being a chef is immediate gratification.

Q: What is your pet peeve?

A: People texting during dinner at a restaurant. Food is a good memory that should be shared.
